History

J.B. Arrington, former ag teacher and owner of JB’s Barbeque, opened the restaurant in June of 1972. He and his wife, Mary, extensively researched the barbeque business for several years and experimented with various recipes before deciding to create their own. All recipes for side orders and their famous barbeque sauce are original.

J.B. grew up on a 40-acre farm where they raised cattle and smoked and cured their own meat. He utilized this background along with his education and experience in agriculture. During his college years, he earned money by barbequing meat he’d bought on credit. He charged meat at a packing house and charged bread, pickles and onions at a grocery store. People paid what they thought it was worth and he paid the packing house and grocery store.

JB’s Barbeque serves only USDA choice or prime beef and smokes it on huge cast-iron rotisserie pits that turn one revolution per minute. Fresh-cut oak is the wood used to smoke the meat because it produces a lot of smoke. Briskets are marinated in the cooler with a dry rub of salt, black and red pepper for several days before smoking for 12-16 hours. To keep juices intact, meat is cooked whole and never punctured in the cooking process. Jay Mathews, J. B.'s son-in-law, took over the management of the restaurant in 1978 and continues to run it.
